Easy Creamy Cucumber Salad

Description

This creamy cucumber salad is a refreshing and satisfying dish, perfect for hot summer days or as a light side for any meal. It pairs perfectly well with grilled meats or fish making it the perfect summer salad.


Ingredients

Scale
  • 2 large English cucumbers, cut into thin slices
  • ¼½ medium red onion, cut into thin slices

Dressing

  • ½ cup (118 ml) sour cream
  • 2 tbsp mayonnaise
  • ½ tbsp red wine vinegar
  • 1 tbsp fresh dill, chopped
  • ¼ tsp garlic powder or 1 fresh garlic, finely minced
  • ½ tsp white sugar or honey
  • Salt and pepper to taste

Instructions

  1. In a small bowl stir all of the ingredients for the marinade until well combined. Set it aside.
  2. Place the cucumbers and red onion in a large salad bowl.
  3. Pour the dressing over the cucumbers and red onion and mix everything well to make sure they are evenly coated. Seve immediately.

Notes

  • You can use regular cucumbers for this salad. Just make sure to peel them and remove the seeds.
  • Soak the onions in water for about 5 minutes to remove some of the strong onion flavor. Drain them well before adding the dressing.
  • You can also use plain Greek yogurt to make a lighter version of this salad. It won’t be as creamy but it will still be delicious.
  • This salad is best when served immediately. However, if needed, you can store it in the fridge for a couple of hours before the cucumbers start to release some of their moisture.
