Description
This creamy cucumber salad is a refreshing and satisfying dish, perfect for hot summer days or as a light side for any meal. It pairs perfectly well with grilled meats or fish making it the perfect summer salad.
Ingredients

- 2 large English cucumbers, cut into thin slices
- ¼–½ medium red onion, cut into thin slices
Dressing
- ½ cup (118 ml) sour cream
- 2 tbsp mayonnaise
- ½ tbsp red wine vinegar
- 1 tbsp fresh dill, chopped
- ¼ tsp garlic powder or 1 fresh garlic, finely minced
- ½ tsp white sugar or honey
- Salt and pepper to taste
Instructions
- In a small bowl stir all of the ingredients for the marinade until well combined. Set it aside.
- Place the cucumbers and red onion in a large salad bowl.
- Pour the dressing over the cucumbers and red onion and mix everything well to make sure they are evenly coated. Seve immediately.
Notes
- You can use regular cucumbers for this salad. Just make sure to peel them and remove the seeds.
- Soak the onions in water for about 5 minutes to remove some of the strong onion flavor. Drain them well before adding the dressing.
- You can also use plain Greek yogurt to make a lighter version of this salad. It won’t be as creamy but it will still be delicious.
- This salad is best when served immediately. However, if needed, you can store it in the fridge for a couple of hours before the cucumbers start to release some of their moisture.
