Description
This Marry Me Chicken recipe features tender, golden-brown chicken breasts bathed in a rich and creamy sauce. The addition of sun-dried tomatoes adds a pop of color and a sweet, tangy flavor making it the perfect dish to serve for a special occasion or as a comforting meal.

- 2 tbsp olive oil
- 2 tbsp butter
- 4 boneless, skinless chicken breasts (You can use thinly sliced chicken breasts. If using regular-sized chicken breasts you can slice them in half lengthwise or pound them with a mallet to even them out)
- 2 cloves garlic, minced
- ¾ cup (177 ml) chicken stock
- ¾ cup (177 ml) heavy cream
- ¼ cup (25 g) Parmesan cheese, grated
- 1 tsp chili flakes (Optional)
- ½ tsp thyme
- ½ tsp oregano
- ⅓ cup (18 g) sun-dried tomatoes
- Salt to taste
- Pepper to taste
- 2 tbsp fresh basil leaves, chopped (For garnishing)
Instructions
- Season the chicken breasts generously with salt and pepper to taste on both sides.
- In a large pan or skillet, melt the butter with the olive oil over medium-high heat. Add the chicken breasts and cook until golden brown, about 4-5 minutes per side. Remove the chicken from the pan.
- Reduce the heat to medium, add the minced garlic, and sauté for about 1 minute. Now add the chicken stock and simmer for a few minutes while scraping the bottom of the pan.
- Add the heavy cream and Parmesan cheese. Let this simmer for a few minutes to let the cheese dissolve.
- Add the chili flakes, thyme, oregano, sun-dried tomatoes, salt, and pepper, and continue simmering for 2-3 minutes to let the sauce thicken.
- Transfer the cooked chicken breasts back into the pan and simmer for another 3-4 minutes while basting them with the sauce.
- Garnish with fresh basil and serve with pasta, potatoes, rice, or vegetables.
