Classic Homemade Hamburger Helper (Cheesy Beef Pasta)
One of my favorite comfort foods to make in the fall is this easy Homemade Hamburger Helper. Made with lean ground beef, pasta shells or elbow macaroni, and plenty of creamy cheddar cheese, it’s simple, hearty, and packed with flavor. And the best part? Everything comes together in just one pot, making it an easy weeknight meal with minimal cleanup.

Just like everyone else, Hamburger Helper was one of my favorite meals growing up. I mean, what kid doesn’t love having all their favorite foods like ground beef, cheese, and pasta together in one bowl? Every time I saw my mom making it, I was oh so happy!
And I’m not here to knock the boxed Hamburger Helper. I personally love it! But now that I’m a “responsible” adult, I’m trying to focus on making recipes with more fresh ingredients and less sodium. High blood pressure, stay away from me!
So, that’s pretty much why I started making this recipe from scratch. And honestly, it comes out just as good, if not better, than the boxed version.

- Ground beef. Use lean ground beef to keep the dish from becoming too greasy. You can also use ground chicken or turkey for a lighter option.
- Onion and garlic. These aromatics add another layer of flavor to the ground beef and the entire dish.
- Tomato paste. It adds flavor and color while also helping to thicken the sauce.
- Seasonings. To give this homemade version that classic Hamburger Helper flavor, we’ll season the beef with garlic powder, onion powder, chili powder, paprika, salt, and pepper.
- Beef broth. We’ll use beef broth to cook the pasta while also adding more flavor to the dish.
- Pasta. Elbow macaroni is the traditional pasta used in the boxed version, but I often use pasta shells because they’re perfect for catching all that creamy cheese sauce. Feel free to use your favorite small pasta instead!
- Cheese. Use medium or sharp cheddar cheese for a deliciously tangy flavor and a creamy, cheesy sauce. For the best results, freshly shred the cheese yourself.
- Heavy cream. This is optional, but I like adding a small amount to give the sauce an extra-thick and velvety texture.

- Cook the ground beef, onion, and garlic in a large pot or Dutch oven until the beef is browned. Drain any excess fat.

- Stir in the tomato paste and seasonings, and cook briefly to bring out their flavors.

- Add the beef broth and bring it to a boil. Stir in the pasta and cook until al dente.

- Stir in the shredded cheese and heavy cream until the cheese is melted and the sauce is creamy. Serve hot!

Tips for Making the Best Homemade Hamburger Helper
- Use your favorite small pasta. Elbow macaroni is the classic choice, but pasta shells, small penne, rotini, or cavatappi also work well. Just keep in mind that cooking times can vary depending on the type of pasta you use.
- Use low-sodium beef broth. This gives you more control over the amount of salt in the finished dish. You can always add more salt at the end if needed.
- Shred the cheese yourself. For the smoothest and creamiest sauce, use freshly shredded cheese instead of pre-shredded cheese, which can contain ingredients that prevent it from melting as smoothly.
- Let it rest before serving. The sauce will continue to thicken as the Hamburger Helper sits for a few minutes after cooking. If it looks a little thin at first, give it about 5 minutes before adding more cheese or liquid.
- Don’t overcook the pasta. Cook it just until al dente because it will continue to absorb some of the sauce as it rests.
- For leftovers: The pasta will absorb more of the sauce as it sits. When reheating, add a splash of beef broth or milk to loosen it back up.

- 🥗 Lighter: Use ground turkey or chicken instead of beef and reduce or skip the heavy cream. You can also use a lower-fat cheese while still keeping the dish creamy and satisfying.

Classic Homemade Hamburger Helper
Ingredients
- 1 lb lean ground beef
- ½ white or yellow onion, chopped
- 1 garlic clove, minced
- 2 tablespoons tomato paste
- ½ teaspoon garlic powder
- ½ teaspoon chili powder
- ½ teaspoon paprika
- Salt and black pepper to taste (I usually start with ½ teaspoon salt and ¼ teaspoon black pepper)
- 3 cups low-sodium beef broth
- ½ lb small pasta (such as elbow macaroni, pasta shells, or other small pasta)
- 2 cups shredded cheddar cheese
- 2-4 tablespoons heavy cream
- Chopped fresh basil or parsley (for garnish)
Instructions
- Cook the beef. Heat a large pot or Dutch oven over medium-high heat. Add the ground beef, onion, and garlic, and cook until the beef is fully browned and cooked through, breaking it apart with a wooden spoon or spatula as it cooks. Drain any excess fat.
- Add the seasonings. Stir in the tomato paste, garlic powder, chili powder, paprika, salt, and black pepper. Cook for about 1 minute, stirring constantly, to combine the flavors.
- Add the broth. Pour in the beef broth and bring the mixture to a boil over high heat.
- Cook the pasta. Stir in the pasta and bring the mixture back to a boil. Cover the pot, reduce the heat to a simmer, and cook according to the pasta package instructions, or until the pasta is al dente and most of the broth has been absorbed. This usually takes about 10–13 minutes, depending on the type of pasta you use. Stir occasionally to keep the pasta from sticking to the bottom of the pot.
- Make it creamy. Remove the pot from the heat and stir in the shredded cheddar cheese until melted and creamy. Add the heavy cream and stir until well combined.
- Serve. Let the Hamburger Helper rest for about 5 minutes to allow the sauce to thicken slightly. Garnish with chopped fresh basil or parsley and serve warm.

Since the pasta will absorb more of the sauce as it sits, add a splash of beef broth or milk while reheating to make it creamy again.
