Cilantro Lime Rice

Ingredients

Scale
  • 1 cup (225 g) long grained white rice
  • 2 cups (480 ml) water
  • 2 tsp olive oil
  • ½ tsp salt or to taste
  • 1 tsp butter (Optional)
  • 1½ tsp lime juice
  • 1½ tsp lemon juice
  • ¼ cup (12 g) cilantro, chopped

Instructions

  1. Place rice, water, oil and salt in a medium pot. Bring to a boil on high heat. Once it’s boiling reduce heat to low and simmer for 20 minutes or until all the water is gone and small dimples appear on top of the rice.
  2. Place cooked rice in a medium bowl. Add butter, lime juice, lemon juice and cilantro. Stir and serve.
