Ingredients

  • 1 cup (125 g) unsalted peanuts
  • 23 hot peppers, finely chopped (habanero or jalapeños work really well)
  • 2 green onions, chopped (stalks only)
  • ¼ cup (4 tbsp) chopped cilantro
  • 1 seedless roma tomato (chopped)
  • 1 cup (240 ml) chicken broth
  • The juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. Toast the peanuts in a large pan over medium heat. You can toast them until some of them are slightly charred. Remove from the heat and let it cool.
  2. Chop the peanuts really well in a food processor. You can also place them in a sealed bag and crush them with a rolling pin or thick glass bottle. Another option would be to blend the peanuts with the chicken broth in a blender.
  3. 3. In a medium bowl, mix the finely chopped peanuts, hot peppers, green onion, cilantro, tomato, chicken broth and lime juice. Season with salt and pepper to taste and serve.
