Salpicón (Colombian Fruit Cocktail)

Ingredients

  • 3 cups watermelon, cut into chunks
  • 2 cups pineapple, cut into chunks
  • 1 cup grapes, cut in half
  • 1 mango, cut into chunks
  • 2 bananas, cut into slices
  • 1 small can (5 oz.) sweetened condensed milk (optional)
  • 1 liter or 3 (12 oz.) cans of Colombiana soda, strawberry or orange flavored soda. You can also use strawberry, watermelon or papaya juice
  • Vanilla ice cream (opcional)
  • 68 Rolled or regular wafers (opcional)

Instructions

  1. Mix all fruit in a large bowl.
  2. Drizzle the inside of your serving glass with the condensed milk.
  3. Fill up the glass with the fruit just over half way full.
  4. Add the soda or juice leaving room for the ice cream.
  5. Top with a scoop of vanilla ice cream and serve it with a wafer for decoration.

Notes

Mix in the bananas right before serving because they tend to turn brown over time.
