Ingredients
Scale
- 2½ liters water (about 10–12 cups)
- ½ white onion, chopped or grated
- 2 garlic cloves, finely chopped
- 3/4 cup (113 g) carrots, chopped
- 1½ lb beef (chuck or beef shortrib, etc.) cut into cubes
- 2 cubes of Colombian aliños (seasoning) or 4 tbsp (optional)
- Salt and pepper to taste
- 3 cups russet potatoes, cut into cubes (about 6 medium potatoes)
- 12 Patacones (fried green plantain chips) (made with about 2 green plantains)
- Chopped cilantro to decorate
Instructions
- Pour water into a large pot, add the white onion, garlic, carrots, beef and aliños. Season with salt and pepper to taste. Cover and bring to a boil on high heat, then reduce heat to medium and cook for about 20-25 minutes.
- Uncover and add the potatoes and fried green plantains. Cover again and bring to a boil on high heat, then reduce to medium and cook for another 20 minutes or until potatoes are tender. Taste for seasoning and add more salt and pepper if needed.
- Serve immediately with some chopped cilantro sprinkled on top. You can also serve it with white rice and avocado slices.
