Ingredients

  • 1¼ cup (188 g) yellow cornmeal
  • 1 cup (140 g) all purpose flour
  • ½ cup (100 g) white granulated sugar
  • 1 tbsp baking powder
  • ½ tsp salt
  • 1 cup (240 ml) milk
  • 1 large egg (At room temperature)
  • ¼ cup (56.5 g) melted butter
  • Cooking spray or butter (To grease the baking dish)

Instructions

  1. Pre-heat oven to 400ºF (204ºC).
  2. Prepare an 8 x 8 inch (20 cm x 20 cm) baking dish by spraying all sides with cooking spray or butter. Cover with parchment paper and then lightly spray the parchment paper as well.
  3. In a medium bowl mix the yellow cornmeal, all purpose flour, sugar, baking powder and salt. Stir well and set aside.
  4. In a large bowl whisk the milk, egg, and melted butter. Then, add the dry ingredients and mix until well combined.
  5. Pour batter into prepared baking dish and bake for 20-25 minutes or until a toothpick inserted in the middle comes out clean. Serve warm.
