Ingredients

Scale

Green sauce:

  • 1 cup (120 g) mayonnaise
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 1 tbsp white vinegar
  • 1 tsp mustard
  • ¼ tsp ground cumin
  • ½ tsp salt or to taste
  • ½ bunch cilantro (about 1 cup)

BBQ ketchup:

  • ½ cup (120 g) ketchup
  • ¼ cup BBQ (60 g) sauce
  • 23 tsp brown sugar

Sweet tartar sauce or pineapple mayonnaise:

  • ½ cup (120 g) mayonnaise
  • ¼ cup (60 g) pineapple sauce
  • 1 tbsp orange juice
  • 2 tbsp grated carrot
  • ¼ cup (34 tbsp) finely chopped cilantro (you can also use parsley)
  • A pinch salt or to taste

Instructions

To make the green sauce:

  1. Place the 1 cup of mayo, garlic powder, onion powder, white vinegar, mustard, cumin, salt and cilantro in a food processor and blend well.

To make the BBQ ketchup:

  1. Mix the ketchup, BBQ sauce and brown sugar in a small bowl.

To make the sweet tartar sauce:

  1. Mix the ½ cup of mayo, pineapple sauce, orange juice, grated carrot, cilantro and salt in a small bowl. Pour the sauce in an airtight container and store it in the refrigerator. If you want a thicker consistency, you can add more mayo and less orange juice.

Notes

All sauces can last up to 2 weeks in the refrigerator if stored in air tight containers.
