Apple Walnut Salada With Maple Mustard Vinaigrette

Ingredients
  

Salad:

  • 2 cups 150 g baby spring mix greens or any other lettuce
  • 2 cups 450 g baby spinach
  • ¼ cup 30 g dried cranberries
  • ¼ cup 31 g walnuts
  • 2 tbsp cotija cheese (queso fresco, feta or blue cheese, crumbled)
  • ½ green apple thinly sliced (Granny Smith)
  • ½ red apple thinly sliced (Fuji or gala)

Vinaigrette:

  • 3 tbsp olive oil
  • tbsp lemon juice
  • 2-3 tbsp maple syrup
  • tbsp Dijon mustard
  • Salt & pepper to taste

Instructions
 

Salad:

  • In a large bowl toss the baby mixed greens, baby spinach, cranberries, and walnuts.
  • Arrange the apple slices on top of the salad.
  • Sprinkle with the crumbled cheese.

Vinaigrette:

  • Mix the olive oil, lemon juice, maple syrup, Dijon mustard, and salt & pepper in a small jar or container, cover and shake well. You can also whisk these ingredients in a small bowl.
  • Drizzle the salad with the vinaigrette right before serving.

Storage: You can store the dressing in the fridge for up to 3-5 days.
