Colombian Hot Sauce (Version 2)

Ingredients
  

  • ½ cup 25 g cilantro, finely chopped
  • 2 medium seedless tomatoes (finely chopped)
  • ½ cup 90 g red bell pepper, finely chopped, optional (about ½ medium bell pepper)
  • 1-2 green onions (finely chopped (I only use the stalks))
  • 1-2 hot peppers (use any hot pepper that you like, ex.: Habanero, jalapeño, finely chopped)
  • 1-2 garlic cloves (finely chopped)
  • 2 tbsp oil
  • 1-2 tbsp lime or lemon juice
  • ½ cup 120 ml water
  • ¼ cup 60 ml white vinegar
  • 1 tsp white granulated sugar
  • Salt to taste (about ½-1 tsp)

Instructions
 

  • Mix all the ingredients in a bowl. Keep the mixture in an airtight container or bottle, this way it can last about a week in the refrigerator.
