Instructions
Season the chicken breasts generously with salt and pepper to taste on both sides.
In a large pan or skillet, melt the butter with the olive oil over medium-high heat. Add the chicken breasts and cook until golden brown, about 4-5 minutes per side. Remove the chicken from the pan.
Reduce the heat to medium, add the minced garlic, and sauté for about 1 minute. Now add the chicken stock and simmer for a few minutes while scraping the bottom of the pan.
Add the heavy cream and Parmesan cheese. Let this simmer for a few minutes to let the cheese dissolve.
Add the chili flakes, thyme, oregano, sun-dried tomatoes, salt, and pepper, and continue simmering for 2-3 minutes to let the sauce thicken.
Transfer the cooked chicken breasts back into the pan and simmer for another 3-4 minutes while basting them with the sauce.
Garnish with fresh basil and serve with pasta, potatoes, rice, or vegetables.
