Ingredients
  

  • 2 tbsp olive oil
  • 2 tbsp butter
  • 4 boneless (skinless chicken breasts (You can use thinly sliced chicken breasts. If using regular-sized chicken breasts you can slice them in half lengthwise or pound them with a mallet to even them out))
  • 2 cloves garlic (minced)
  • ¾ cup 177 ml chicken stock
  • ¾ cup 177 ml heavy cream
  • ¼ cup 25 g Parmesan cheese, grated
  • 1 tsp chili flakes (Optional)
  • ½ tsp thyme
  • ½ tsp oregano
  • cup 18 g sun-dried tomatoes
  • Salt to taste
  • Pepper to taste
  • 2 tbsp fresh basil leaves (chopped (For garnishing))

Instructions
 

  • Season the chicken breasts generously with salt and pepper to taste on both sides.
  • In a large pan or skillet, melt the butter with the olive oil over medium-high heat. Add the chicken breasts and cook until golden brown, about 4-5 minutes per side. Remove the chicken from the pan.
  • Reduce the heat to medium, add the minced garlic, and sauté for about 1 minute. Now add the chicken stock and simmer for a few minutes while scraping the bottom of the pan.
  • Add the heavy cream and Parmesan cheese. Let this simmer for a few minutes to let the cheese dissolve.
  • Add the chili flakes, thyme, oregano, sun-dried tomatoes, salt, and pepper, and continue simmering for 2-3 minutes to let the sauce thicken.
  • Transfer the cooked chicken breasts back into the pan and simmer for another 3-4 minutes while basting them with the sauce.
  • Garnish with fresh basil and serve with pasta, potatoes, rice, or vegetables.
