In a medium pot mix the water and salt. Then add the potatoes, cover and bring to a boil over high heat.
Reduce the heat to medium low and cook for about 35-40 minutes or until the water evaporates. Start swirling the potatoes inside the pot just before the water evaporates to make sure they are covered completely with the salt.
Serve potatoes hot or cold. You can also serve them with a side of Colombian green hot sauce.
