Ingredients

  • ½ cup (45g) breadcrumbs
  • ½ cup (75g) yellow cornmeal (For baking and breading)
  • 1 tsp salt
  • ½ tsp black ground pepper
  • 1 tsp dry thyme
  • 1 tsp paprika
  • ½ tsp celery seed
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ cup (118 ml) milk
  • 1 large egg
  • 4 catfish fillets
  • Cooking spray (Optional)

Instructions

  1. Preheat your oven at 425ºF (220ºC).
  2. In a shallow pan mix the first 9 ingredients.
  3. Beat milk and egg in a medium or large bowl.
  4. Cover a large baking sheet with parchment paper or nonstick aluminum foil.
  5. Drench each catfish filet with the egg mixture, make sure they are well coated. Then dip them in the cornmeal mixture making sure both sides are well covered. Place them on the baking sheet.
  6. Spray each fillet liberally with the cooking spray until wet. (Optional).
  7. Bake them for about 15 minutes. Serve immediately.
