Description

This is a delicious Colombian treat made with ripe plantains. The sweetness of the ripe plantains combined with the guava paste and the saltiness from the melted cheese is what makes this recipe amazing and unique.


Ingredients

  • 1 tbsp vegetable oil
  • 1 tbsp butter
  • 2 plantains (very ripe, soft and with black spots)
  • Mozzarella cheese, to taste (shredded or in pieces, I tend to use about ¼ lb)
  • Guava paste, to taste (I use about 2-3 long pieces)

Instructions

  1. Pre-heat oven at 400ºF (204ºC).
  2. Heat oil and butter in a large pan over medium heat.
  3. Sear both plantains on all sides until they turn golden brown. Remove from the pan and let them cool slightly.
  4. Cut the top of the plantains lengthwise (do not cut them all the way through) and fill them with the cheese and guava paste. Place them on a baking sheet and bake them until the cheese melts completely, about 20-25 minutes. Serve immediately.
