Ingredients

Carne Asada Marinade

  • ¼ cup 59 ml orange juice (1 large orange)
  • 2-3 tbsp lime juice (1 lime)
  • ¼ cup 59 ml oil (You can use your favorite)
  • ½ white onion (sliced or diced)
  • 2-3 cloves garlic (minced)
  • ½ cup cilantro (chopped (about ½ bunch))
  • 1 tsp ground cumin
  • 2 tsp chili powder or paprika
  • Salt and pepper to taste
  • Carne Asada Tacos
  • lbs skirt or flank steak
  • Corn or flour tortillas
  • Chopped cilantro
  • Chopped white onion
  • Your favorite salsa or condiments like roasted tomatillo salsa verde (restaurant-style salsa, pico de gallo, guacamole)
  • Lime wedges

Instructions

  • In a medium bowl mix all of the ingredients for the marinade.
  • Place the steak in a large glass bowl or baking dish and pour in the marinade. Make sure all sides of the beef are covered. Cover with plastic wrap and refrigerate for at least 4 hours, preferably overnight. You can also use a large Ziploc bag to marinate the steak.
  • Preheat the grill on medium-high heat for about 10 minutes. Grill the marinated steak for 4-5 minutes per side for medium-rare or 5-6 minutes per side for medium. Grill longer for well done. You can also use a grill pan if grilling indoors.
  • Remove the steak from the grill and let it rest for 10 minutes. You can then cut it into thin slices by going against the grain, or chop it into small pieces.
  • Heat the tortillas on a large skillet or griddle over medium heat until warm. You can also warm them in the microwave.
  • Assemble the carne asada tacos by placing a small amount of grilled steak in the center of the tortilla, top it with chopped onion, chopped cilantro, guacamole, and your favorite salsa.
