Vegetable Stir Fry

This vegetable stir fry is an easy and quick way to prepare delicious vegetables with few ingredients. I am using broccoli and green cabbage in this recipe to make a copycat version of Panda Express’s super greens side dish. But the great thing about this DISH is that you can use any other vegetables like peppers, zucchini, yellow squash, onion, kale, and bok choy, to name just a few.

Making this recipe at home is super easy, not to mention a very healthy way to prepare your favorite veggies. Even though we are using a stir fry method, we are pretty much just steaming them with a little bit of soy sauce for flavor.

Recipe Ingredients

With just a handful of ingredients, you will be making an amazing side dish in very little time.

  • Vegetables – In this recipe, I am using broccoli and green cabbage but you can make it with your favorite vegetables. Zucchini, yellow squash, onion, and peppers are also great options. Just keep in mind that you may have to cook them a little bit longer.
  • Oil – I always make this vegetable stir fry with olive oil since I am not cooking them on very high heat. You can also add a splash of sesame oil for more flavor.
  • Ginger and Garlic – To make things easier I use ground ginger and garlic powder but if you prefer to use fresh ingredients, you can do that as well.
  • Soy sauce – A couple of tablespoons of soy sauce give this recipe a huge amount of flavor.
  • Water or Chicken Broth – This is optional and you can add it to help steam the vegetables for a few minutes right at the end. I have also made this vegetable stir fry with a tiny bit of chicken broth and it comes out delicious.

Making This Vegetable Stir Fry

Only a few steps are needed to prepare this delicious stir fry.

  • Heat the oil in a wok or large pan. I don’t own a wok, so my large pan is good enough to make this dish.
  • Add the broccoli and cook for a couple of minutes. Then, add the green cabbage, stir, and cook for another few minutes.
  • Now add the soy sauce, ground ginger, and garlic powder. Stir well to mix everything.
  • Cover the pan and steam for about 3-4 minutes or until the broccoli has a beautiful green color. You can also add a small amount of water or chicken broth to help with the steaming process.

Serving This Vegetable Stir Fry

This vegetable stir fry is so versatile that you can serve it with pretty much anything. It goes very well with Chinese recipes like this Healthy Orange Chicken, Chicken Stir Fry, or Shrimp Stir Fry.

You can also add cooked chicken, beef, or shrimp to this recipe and serve it as a whole meal.

Ingredients

  • 2 tbsp olive oil
  • 4 cups (700 g) broccoli florets
  • 4 cups (400 g) green cabbage, roughly chopped
  • 2 tbsp soy sauce
  • ¼ tsp ground ginger (You can also use fresh ginger to taste)
  • ¼ tsp garlic powder (You can also use 1 clove of fresh garlic finely chopped)
  • ¼ cup (59 ml) plus 2 tbsp water or chicken broth (Optional)

Instructions

  1. Heat the oil in a large wok or pan over medium-high heat.
  2. Add the broccoli and stir fry for 1-2 minutes.
  3. Now add the green cabbage and stir fry for another 1-2 minutes.
  4. Add in the soy sauce, ginger, and garlic, and then stir to mix well.
  5. Add the water or chicken broth, if using. Cover the pan and steam for about 3-4 minutes or until the broccoli turns bright green. The vegetables should be firm and not soggy. Serve immediately.
