Italian cream soda isn’t actually Italian. It was invented in San Francisco by the founders of Torani, the syrup company now famous for flavoring coffees, cocktails, and sodas everywhere. Back in the 1920s, American sodas were very popular, so Torani figured they’d use their own syrups to make a version of their own! And… it stuck.

All you need is ice, sparkling water, cream, and whatever syrup you’re in the mood for. I keep a few in my fridge at all times so we can make one whenever the craving hits.

  • Ice – Keeps the drink perfectly chilled.
  • Sparkling Water or Club Soda – It adds a flavorless fizz that easily blends with the bold taste of the flavored syrups.
  • Flavored Syrup Use it to sweeten and infuse the soda with your favorite flavor.
  • Half and Half Creates the signature creamy texture that makes this soda rich, smooth, and delicious. You can also use heavy whipping cream.
  • Whipped Cream Finish this drink with a dollop of whipped cream to add an inviting, extra touch of sweetness.

Making an Italian cream soda is basically just pouring a drink over ice, and it will make you look like the most experienced barista. That’s why I keep making these for friends and family all summer long. 😁

  1. Fill a tall glass with plenty of ice.
  2. Pour in the sparkling water or club soda.
  3. Add your favorite flavored syrup and stir to combine.

Recipe Tip: If you’d rather skip the cream, simply leave it out! You’ll end up with a classic Italian soda that’s light, bubbly, and just as refreshing.

What’s the difference between an Italian soda and a dirty soda?

An Italian soda is made with sparkling water or club soda and flavored syrup, creating a light, fizzy drink. A dirty soda, on the other hand, is typically made with a soft drink like cola, lemon-lime soda, or root beer, then mixed with flavored syrup, cream, and sometimes fruit juice or lime.

Can I use sparkling water instead of club soda?

Yes. Sparkling water and club soda both work well. Club soda has added minerals for a slightly saltier taste, while sparkling water has a cleaner, more neutral flavor.

Why did my cream curdle in the soda?

Very acidic syrups can sometimes cause dairy to separate slightly. Using cold ingredients and adding the cream slowly after stirring in the syrup helps minimize curdling.

Can I make an Italian cream soda without half and half?

Yes! You can use heavy cream, light cream, whole milk, or your favorite dairy-free creamer. Or, simply leave out the cream altogether to make a classic Italian soda.

  • Tall GlassGives you plenty of room for the ice, sparkling water, syrup, cream, and whipped cream.
  • Measuring Cup Helps measure the club soda or sparkling water accurately.
  • Measuring Spoons or Syrup Pump Makes it easy to add the right amount of flavored syrup. If you’re using coffee-shop syrups like Torani or Monin, a syrup pump is especially convenient.
  • Flavored Syrups I love using coffeehouse-style syrups because they come in so many delicious flavors!
  • Long Spoon Gently stirs the syrup into the sparkling water without losing too much carbonation.

  • Pour in the sparkling water or club soda, leaving about 1–2 inches of space at the top for the syrup and cream.
  • Add your favorite flavored syrup and stir to combine.
